Product details: 

 Stephan Katongole is a passionate coffee farmer who moved from Germany to Uganda in 2013 to continue his grandparents' coffee business in Sembabule. He has specialized in refining Robusta coffee, particularly the Coffea Canephora variety, commonly known as Robusta.

Stephan produces high-quality Canephora coffee, which develops low acidity and wonderful sweet aromas through special processing techniques such as "anaerobic processing." The coffee impresses with flavor notes of tropical fruits with a fine acidity and sweet chocolate.

As a member of the Slow Food Uganda network, Stephan actively advocates for sustainable agriculture and promotes the recognition of Fine Robusta as a premium coffee variety.

His efforts to elevate Robusta coffee to a new level of quality have earned him worldwide recognition. Stephan Katongole represents the successful combination of tradition and innovation in coffee production and plays a key role in gaining greater appreciation for Robusta coffee internationally.

 

How is Stephan Katongole Anaerobic processed?

Stephan places great importance on the precise processing of the coffee cherries. After harvesting, the ripe, red cherries are placed in airtight tanks. The cherries then remain in the airtight tanks for 24-36 hours without oxygen, after which the coffee dries for about 20-30 days on special drying beds. During the drying process, the beans are regularly turned, and damaged beans are sorted out. After 20-30 days, the beans reach the ideal moisture content and can finally be hulled, packed in jute bags, and prepared for export. Since this process is complex and can only be carried out under specific climatic conditions, the yield per harvest cycle is comparatively low.

 

 

Our coffees are available in different quantities as whole beans or ground. You can choose between various grind levels – depending on which coffee machine you use to prepare your coffee.
